I recently made an amazing discovery while grocery shopping the other day. I've heard about a fruit called jackfruit being used as a replacement for meat, but I was very skeptical. I mean, fruit that mimics the texture and flavor of meat? Really?
Oh yes! I picked up this little gem from the health food store on a whim. Having an open mind is so important when it comes to living a healthy lifestyle. So, why not? I got the sesame-ginger flavored "pork"which I made with brown basmati rice and broccoli.
I must say, not only was this dish delicious, but it was so very much like pork that I was sort of uncomfortable eating it! The flavors were very much on point and the ingredients were minimal and trustworthy. So, give it a shot! Let me know what you think!
